Eggy Bread Fruit Cake

If you are looking for a weekend breakfast treat, but prefer something sweet to the fry-up variety, then this might just fit the bill!

It's quick and easy, provided you have some fruitcake to hand, which we did - thanks Mum!



I simply beat up an egg in a shallow casserole dish, and cut some thin slices of fruit cake. I left them to soak in the beaten egg for a couple of minutes, turned them and left them for a couple more.

I then heated 1tbsp sunflower oil in a frying pan, and cooked the slices for 2-3 mins on each side over a low heat.


To serve I sprinkled over some icing sugar - delicious!
